Alkaline Breakfast: 10 Ideas With Calculated PRAL Values
Quick answer

An alkaline breakfast makes fruit the main ingredient and gets by with little grain, cheese and egg. The simplest formula: add a banana or two handfuls of fruit to whatever you already eat. That puts even oatmeal made with rolled oats (+6.8 per 100 g) in the minus. Below are ten versions, from smoothie to scrambled eggs, each with a calculated balance. Coffee with it is no problem. It’s slightly alkaline.

Why breakfast is usually acidic

Classic German breakfasts are grain plus dairy plus egg: a roll with cheese, muesli with yogurt and nuts, toast with scrambled eggs. Almost every component is in the plus. A cheese roll comes to about +9, muesli with milk and nuts to roughly zero, two scrambled eggs on toast to +15. That’s no disaster, but it gives the acid side a head start that the rest of the day has to make up.

Fruit turns this around because it’s strongly alkaline and fits the morning anyway: banana −6.4, apple −1.9, berries −1 to −3, dried dates −13.4 per 100 g. So the rule for any breakfast isn’t “drop the oats.” It’s “add fruit.”

ℹ️ Coffee stays

Black coffee has a PRAL of −2.3 per 100 ml, −2.2 with a splash of milk, and −0.3 as a cappuccino. It doesn’t belong on your list of things to cut. If you cut back on coffee, it’s for other reasons.

Ten alkaline breakfasts

Sorted from very quick to a bit more effort. All values come from the Basentracker database, amounts are for one person.

2 minutesBanana with almonds and coffee

−10.2 strongly alkaline
The fastest alkaline breakfast there is 206 kcal

3 minutesGreen smoothie

−16.2 strongly alkaline
You can't taste the spinach; banana and apple cover it 164 kcal

5 minutesPlain yogurt with berries and banana

−7.1 strongly alkaline
Yogurt is almost neutral; the fruit makes the balance 328 kcal

5 minutesOvernight oats with oat drink and fruit

−8.7 strongly alkaline
The rolled oats (+3.4 for 50 g) are more than offset by banana and berries 359 kcal

8 minutesWarm oatmeal with apple and date

−2.4 alkaline
Dates sweeten more than honey and are strongly alkaline 463 kcal

5 minutesAvocado on wholemeal bread with tomato

−10.9 strongly alkaline
One slice of bread; the topping turns the balance 234 kcal

10 minutesScrambled eggs on spinach instead of toast

−9.6 strongly alkaline
Two eggs (+12.8) versus 150 g spinach (−18.2): the eggs stay, the toast goes 267 kcal

5 minutesFruit plate with coconut yogurt

−18.3 strongly alkaline
For days without grains 325 kcal

10 minutesFried potatoes with a fried egg

−7.9 strongly alkaline
The savory alkaline breakfast: the potatoes carry the egg 343 kcal

3 minutesQuark with lots of fruit

−0.4 neutral
Quark (a fresh, high-protein dairy product similar to strained yogurt) alone would be +9.5; with fruit the sign flips just into the minus 465 kcal

The comparison: the same breakfast with and without fruit

Classic muesli

+0.5 neutral
Just above zero; no minus without fruit 464 kcal

Muesli with banana and berries

−9.4 strongly alkaline
Same bowl, nuts swapped for fruit 464 kcal

Almost ten points of difference from two handfuls of fruit. That’s the whole trick.

What you can skip at breakfast, and what you can’t

Big lever: cheese on your roll (+5 per slice), cold cuts (+4 per 30 g), nuts in large amounts (walnuts +5.6, cashews +7.1 per 100 g), muesli without fruit. Crispbread (+1.7 per 100 g) as a bread substitute hardly helps.

No lever: coffee (alkaline), milk (neutral), sugar or honey in your tea (neutral), butter (+0.1 for 10 g). These four show up on every “avoid” list, yet they don’t matter for your balance.

Surprise: rolled oats are acid-forming (+6.8), but at a normal serving (50 g = +3.4) they’re easy to offset. Oat drink instead of milk adds an extra −3. Wholemeal bread (+2.6) is even lower than white bread (+3.7) and is the better choice anyway.

Frequently asked questions

Is oatmeal alkaline? The rolled oats aren’t (+6.8 per 100 g), but the bowl is once you add banana and berries. See the two oatmeal versions above. Both are in the minus.

Which bread is the most alkaline? None is alkaline. Buckwheat bread (+0.2) comes closest, then wholemeal bread (+2.6), rye bread (+3.0) and white wheat bread (+3.7). The topping counts more than the type of bread.

Is honey more alkaline than sugar? Barely: −1.2 versus 0.0 per 100 g. With a teaspoon, the difference isn’t measurable. Dried dates (−13.4) are the alkaline sweetener that actually counts.

What should I drink with an alkaline breakfast? Coffee, tea, water: all fine. Orange juice is alkaline (−2.4 per 100 ml), but each glass brings the sugar of three oranges.

Bottom line

You don’t have to rebuild your breakfast, just add to it. Fruit on or next to what you already eat turns the balance for almost all the classics. The cheese on your roll is the only item that calls for a real swap. Avocado, tomato or hummus do that job better than it sounds.
